
Every year when I was a kid, my parents' friends held an annual potluck-style spring brunch. It was something I looked forward to for one reason — breakfast casseroles. They. Were. Delicious! And when my kids were growing up, breakfast casseroles became a regular part of their morning routines. They were easy to make, tasty, and kept well for several days so my family could have a hot breakfast even on a busy morning. What's not to love about that?
Now, I'm passing my love for breakfast casseroles on to you with some of the best breakfast casserole recipes I've found.
Ingredients
- 1 pound bulk breakfast sausage, cooked and crumbled
- 10 slices of bread, cut into cubes
- 12 eggs
- 2 cups half and half
- ½ teaspoon sea salt
- ⅛ teaspoon freshly-cracked black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dion mustard
- 1 cup shredded Swiss cheese
Instructions
- Grease a 9x13 baking dish.
- Put the bread in an even layer on the bottom of the prepared baking dish.
- Add the sausage.
- In a large bowl, whisk together the eggs, half and half, salt, pepper, onion powder, garlic powder, and mustard.
- Fold in half of the cheese.
- Pour the egg mixture over the bread and sausage.
- Sprinkle with the cheese.
- Cover and refrigerate for at least one hour, over up to overnight.
- Preheat the oven to 325°F.
- Uncover the casserole and bake in the preheated oven until browned on top, about an hour and 15 minutes.
- Cool slightly before cutting into squares.
Helpful Hack
Make this into a keto breakfast casserole by eliminating the bread. Replace the half and half with 1 cup of heavy cream, and increase the cheese to 2 cups.

- 1 loaf challah bread, cut into one-inch cubes
- 6 eggs, beaten
- ¾ cup half and half
- 1 cup whole milk
- ¼ cup pure maple syrup
- 1 teaspoon vanilla extract
- Zest of 1 orange
- 1 teaspoon cinnamon
- Pinch of salt
- Powdered sugar for dusting
Instructions
- Grease a 9x13" baking dish.
- Spread the bread cubes in an even layer in the dish.
- In a large bowl, whisk together the beaten eggs, half and half, whole milk, maple syrup, vanilla, orange zest, cinnamon, and salt.
- Pour over the bread.
- Cover and refrigerate overnight.
- In the morning, preheat the oven to 350°F.
- While the oven preheats, uncover the casserole and let it rest out of the fridge.
- Bake in the preheated oven until set and golden brown, about 40 minutes.
- Dust with powdered sugar and cut into squares to serve.
